Short’s Kitchen: Chive Pancake

They’re green, they’re stripey, they’re colorful, and they’re delicious and easy to make. They’re Chive Pancakes!

Short: I think these would be an ideal snack to provide at a party (they look so happy and snazzy!) but Bald and I enjoyed them ourselves today for lunch.

Bald: Well, Short, some of the best parties are with only two people. You know, party? Two people, party…?

Short: Back to lunch -

The ingredients are chives (1 large bunch), 6 spoonfuls of flour (unless I say otherwise, I always use a regular dessert spoon), 1 egg, 1 cup of water, 1 spoonful of soy sauce, 1/4 of a spoonful of salt, cooking oil, and for garnish and extra flavor, thin slices of as many colorful peppers (capsicums) as you can get your hands on.

Todays’ recipe is based on Eugene’s recipe (www.unolee.com) with some extra Short tricks!

1. Chop up your chives.

2. Place chopped chives in a bowl, add one cup of water, and mix with a blender.

3. Add the flour, egg, salt and soy sauce.

4. Mix it up some more! (or get your Bald to do it – they’ve got to be good for something!)

Short: Aren’t these colors wonderful!

Chop up your peppers into fairly thin slices. If you don’t have any pepper, you can also use more chopped chives, or even parsley or carrot.

Warm the oil in your pan on a medium heat, then pour in the mixture.

Short: You can make them any size you like, obviously, but I like them about three inches across.

While they’re cooking on the underside, add your pepper garnish on top. The garnish will sink into the batter so you can then flip them over easily and the whole thing will stick together.

Serve them with a dipping sauce. For the sauce, I use 1 spoonful of soy sauce, 1 spoonful of rice wine vinegar, 1/2 spoonful of sugar and a pinch of sesame seeds.

  3. I thought the same too! Like patchwork…:-) I’m a fan of Chives. Most of time I cooked chives with Dried shrimps or add it to Beansprouts patties

    just tried these last night….added grilled chicken slices which were good, but I actually liked the peppers better (if for nothing else – the presentation). My husband LOVED them…they did not make it to the table. So looks like this will be made again – thanks for the recipe!
