Short’s Kitchen: Beer Damper

It’s been getting a bit cooler in New York the last few days, and if you and your Bald are like me and my Bald, that makes you start to feel a bit homey and cozy.

Short: Am I right, Bald?

Bald: Hmmm? Yes, I’m getting ready for my winter hibernation. Pass me a big, woolen sock to pull over my head and let’s curl up by the open fire.

Short: We don’t have an open fire.

Bald: Oops! I think I just put a match to the bookshelf! What’s the number for 911?

Chilly and overcast weather is perfect for baking some good, old-fashioned damper. It’s like bread, but more rustic and old-style.

This recipe is based on an excellent one I found recently from Hungry Kittens (http://hungry-kittens.blogspot.com) I basically followed it but added onion flakes and more cheese so I wouldn’t have to add any salt.

The ingredients below are from Hungry Kittens, with my changes.

INGREDIENTS (Serves 3, or one Bald)

1 and 1/2 cups plain flour

1 and 1/2 tsp baking powder

1/4 cup grated parmesan cheese

1/2 tsp salt (I used 1/3 cup of parmesan cheese and didn’t use salt)

1 tbsp chopped parsley (I used dried parsley flakes)

1/2 tbsp caster sugar

Half of 375ml can of beer (I used Red stripe, yay, go Jamaica! But I guess you can use whatever you like. Bald: Next time, Guinness!)

1/2 tsp sesame seeds

I added 1 tbsp of dried onion flakes

The following steps are from Hungry Kittens

1. Preheat oven to 375F and prepare baking tray with non-stick paper.

2. Sift together the flour, baking powder and salt.

3. Mix all the ingredients together.

4. Add beer and mix well.

Bald: I better taste the beer first to make sure it isn’t…um…too…you know…”beer-ry”.

Short: What would I ever do without you, Bald?

5. If it’s too wet, add flour and form the dough into a ball.

6. Place on a tray, sprinkle with sesame seeds and, using a fork, score the surface. (Bald: I give it 8.7. I’ve seen better surfaces, but 8.7 is still a very good score. And now for the Italian judges?)

7. Bake for 35-40 minutes.

Bald: I better go and throw another book on the fire.

8. It’s really yummy! And quite moist inside. Thank you Hungry Kittens ^^

As Hungry Kittens suggested, top it with lashings of butter while it’s still warm. Heavenly – and sinful – all in one!

Bald: This really is a great way to spend a nippy, early Autumn evening.

Short: Should I toss the New York phone book on the fire?

Bald: Why not? And we can cook our second damper in here!

Short: It’s gone already?!
